1/2 c Soft brown sugar
1 1/2 ts Mixed spice
2 1/2 ts Ground ginger
4 c Whole wheat flour
1/2 c Butter
4 tb Honey
5 tb Thick; dark molasses
2 c Milk
2 ts Baking soda
Crystallized ginger;
- to decorate
Mix the sugar, spices, and flour together in a bowl. In a pan, melt
the butter and add the honey and molasses. Stir until dissolved. Warm
the milk separately and dissolve the soda in it, then combine the
liquid ingredients. Add them to the flour and mix all together well,
then pour it into well-oiled loaf pans. Bake at 300?F for 50 minutes
or until firm. When cool, brush the crust with warm honey and
decorate with slices of crystallized ginger.
